Papa Loves Taco April 24 2019

Ingredients:
1 Pkg. Papa's Juicy Noodles, Beef Flavored
2 lbs. Ground Beef
2 Teasp. Cumin
1 Tables. Chilli Powder
Pinch of Red Pepper Flakes (Optional)
1 Teasp. Salt
1 Teasp. Pepper
1/2 Teasp. Dried Oregano
1 Teasp. Onion Powder
1 Teasp. Garlic Powder
1 Teasp. Paprika
12 oz. bag of Mexican 4 Cheese or Taco Cheese of your choosing

  1. Bring a pot of water to a boil to cook pasta.
  2. In medium sauté pan, place ground beef and all seasonings.
  3. Sauté and scramble until cooked through. Add 1/4 Cup water to sauté pan, stir, and cover. Turn mixture to low to keep warm.
  4. Cook Noodles according to directions on package.
  5. Heat up the Seasoning packet along with the ingredients needed to make the Papa's Juicy Noodles; Water, Butter, Olive Oil and Parmesan Cheese.
  6. Drain Noodles; place back in cooking pot and add the seasoning mixture into the pasta and mix well.
  7. Place a good helping of Papa's Juicy Noodles on a dinner place or in a in a bowl; top with a heaping scoop of beef mixture.
  8. Sprinkle with Mexican 4 Cheese or any favorite Taco cheese.
    Serves 4

PJN Chicken Parm (Parmesan) March 07 2018

Ingredients:

For Pasta:

  • 1 Package of Papa's Juicy Noodles
  • 1 Tables. Butter
  • 1 Tables. Olive Oil
  • 1/4 Cup grated Parmesan Cheese

For Chicken Parm:

  • 4 large boneless Chicken Breast
  • 1 Egg
  • 1 Cup Seasoned Italian Bread Crumbs (or use GF seasoned Bread Crumbs)
  • 1/2 Cup Grated Parmesan Cheese
  • Salt
  • Pepper
  • 1/2 - 3/4 Cup of Marinara sauce or Tomato Sauce of your liking
  • 4 slices of Mozzarella
  • Olive Oil for Sautéing
  1. Slice Chicken Breasts horizontally in half. Place on a plate, salt and pepper both sides.
  2. Place 1 Cup Seasoned Bread Crumbs and 1/2 cup grated Parmesan Cheese on a plate and mix together.
  3. In another wide bowl, beat the egg.
  4. Heat a 10" skillet with Olive oil, enough to cover the whole bottom of the skillet over medium heat.
  5. Place, one at a time, the chicken breast into the egg to coat; then place breast on the plate with the bread crumb mixture. Coat both sides. Place in the heated skillet.
  6. Working quickly, finish dipping and coating the remaining chicken breasts.
    Sauté until crispy and brown on one side, flip and continue cooking this side until brown. Remove to paper towel.
  7. Spray with cooking spray a 9"x 9" over proof baking dish. Place sautéed chicken breasts in baking dish. Top with a couple of tablespoons of Marinara Sauce.
  8. Place Mozzarella slices on top of the Marinara.
  9. Place under broiler for 1-2 minutes to melt and brown the mozzarella cheese.
  10. Drop the noodles from the Papa's Juicy Noodles into the boiling water. Cook 2-3 minutes. Drain just enough water from the pot leaving the noodles covered in liquid.
  11. Add the butter, Olive Oil, and Seasoning Packet. Stir well. Add Parmesan Cheese and stir.

Quick & Easy PJN Vegetable Sauté February 12 2018

Ingredients:

For Pasta:
  • 1 Package Papa's Juicy Noodles (Beef Flavoring)
  • 1 Tables. Olive Oil
  • 1 Tables. Butter
  • 1/4 Cup Grated Parmesan Cheese

For Vegetable Sauté:

  • 1 Cup Asparagus, cut 1 1/4" pieces
  • 1 Cup Baby Bello Mushrooms, sliced
  • 1 Cup Summer Squash, cut in half & sliced 1/2" thick
  • 1 Cup Frozen Broccoli Crowns
  • 2 Tables. Butter
  • 2 Tables. Olive Oil
  • 1/2 Teasp. Minced Garlic
  • 1/2 Teasp. Onion Powder
  • 1/2 Teasp. Dried Parsley
  • 1 Teasp. Kosher Salt
  • 1 Teasp. Black Pepper
  • 1/4 Cup Parmesan Cheese
  1. Put a pot of water on stove to start boiling for the pasta.
  2. In a 12" Sauté pan, Add Butter and Olive Oil, stir on medium heat until melted.
  3. Add minced Garlic and Mushrooms; stir and cook 1 minute.
  4. Add Asparagus pieces, Summer Squash, Onion Powder, Parsley, Salt, and Black Pepper.  Stir together well.   Continue to cook on medium heat.
  5. Add pasta from PJ N package to boiling water.  Stir well.
  6. Cook pasta for 2-3 minutes or until al dente.
  7. When pasta is done, take 1/2 cup of liquid from pot and pour over sautéed vegetables and stir.  Turn off heat.
  8. Drain just enough pasta water leaving just enough to cover the noodles.
  9. Add to pasta in pot, Olive Oil, Butter, and Seasoning Packet. Stir well. Add the 1/4 cup Parmesan Cheese and stir.
  10. Place Papa's Juicy Noodles in serving bowl; add Vegetable Sauté; Stir; Add the remaining 1/4 Cup Parmesan over the top of dish.

Shrimp Scampi PJN Style February 03 2018

Ingredients:

For Pasta:

  • 1 Package Papa's Juicy Noodles (Chicken Flavoring)
  • 1 Tables. Olive Oil
  • 1 Tables. Butter
  • 1/4 Cup Grated Parmesan Cheese


For the Scampi:

  • 2 Tables. Olive Oil
  • 4 Tables. Butter (2Tables. added at beginning & 2 Tables. at end)
  • 1 Clove of finely chopped Garlic
  • 1 Teasp. Kosher Salt
  • 1/2 Teasp. Black Pepper
  • 1 lb Shrimp
  • 1/4 Cup White Balsamic Vinegar
  • 1/4 Teasp. Red Pepper Flakes
  • 1/2 Teasp. Dried Parsley Flakes

Bring a pot of water to boil to cook the pasta.

Heat 10" or 12"  skillet over medium heat. Add Olive Oil, 2 Tables. Butter and stir to melt. Add Garlic, Salt, and Black Pepper. Let cook on medium to low heat for 1 minute.

Add Shrimp to skillet,  cook on one side for a minute, once they start to turn pink, turn to cook other side. Once cooked, remove with slotted spoon to a dish.

Add pasta to boiling water and cook for 3 minutes.

To the skillet add Balsamic Vinegar, Red Pepper Flakes, Parsley Flakes and stir and cook for a minute. Add the other 2 Tables. of butter and stir together over medium heat for 1 minute.

Add shrimp back in to the pan and sauté quickly to coat all the shrimp with the juice. Cook one minute more.

Drain pasta leaving enough water in the pot to barely cover the noodles.

Add seasoning packet, Olive Oil, and remaining 2 Tables. Butter and stir until mixed in well.  Add Parmesan Cheese, stir.

Place noodles in a serving bowl, pour shrimp mixture over the top of the noodles.

Chicken Cutlets with PJN January 18 2018

Ingredients:

For Pasta:

  • 1 Package Papa's Juicy Noodles (Chicken Flavoring)
  • 1 Tables. Olive Oil
  • 1 Tables. Butter
  • 1/4 Cup Grated Parmesan Cheese

For Cutlets:

1 lb. Chicken Tenders (If you can't find the Tenders use Chicken Breast, boneless) Increase the amount of chicken accordingly to how much your family likes. 2lbs will give you 24 or more pieces.   

  • 2 Eggs , beaten with fork

  • 1 Cup of more Italian Seasoned Bread Crumbs, more if needed. (GF    Bread Crumbs can be substituted)

  • Olive Oil or Canola Oil for sautéing

  1. Beat eggs in a medium size bowl with a fork.
  2. Butterfly Chicken Tenders completely in half.
  3. Place Tenders in the bowl with the beaten eggs. Stir well to coat.
  4. Place 1 cup of Italian Seasoned Bread Crumbs in a medium bowl.
  5. With fork, take out two chicken cutlets at a time and lay over the bread crumbs, coating both sides. Place coated tenders on a plate. Continue to bread the Tenders, add to plate, adding more Italian Seasoned Bread Crumbs as needed.
  6. Bring a pot of water to boil to cook pasta.
  7. In a 12" Teflon skillet, place enough oil to completely cover the bottom of the skillet. Heat on medium high heat. Test the heat of the oil by dropping in a piece of the bread crumbs to check if the oil is hot enough.  It should sizzle a little.
  8. Place the breaded Chicken cutlets in the skillet and sauté until golden brown and crispy on the bottom. Flip over with tongs and continue cooking the other side.
  9. As they cook, remove them to a paper towel to absorb some of the oil for a few minutes before placing on a serving plate or bowl. Add more cutlets to the pan as others are removed. If needed, add more oil to the pan to sauté all of the cutlets.
  10. Finish cooking all the cutlets; cover serving plate or bowl with paper towel to keep them warm.
  11. Put pasta from Papa's Juicy Noodles Chicken Flavor Package into the boiling water to cook.  Stirring occasionally.  Cook 3-4 minutes.
  12. Drain out just enough pasta water until there is approximately, 1 cup of liquid remaining in the pot. (Just barely covering the noodles or more if you like them to be juicier.
  13. Add to the noodles in the pot: Papa's Juicy Noodles seasoning packet, Butter, Olive Oil, and Parmesan Cheese.  Stir together well. 
  14. Pour into serving bowl or serve from pot.    Serves 4

Stuffed Meatloaf January 18 2018

Ingredients:
2 lbs. Hamburg
3 Eggs
1 Tables. Dried Parsley
1 Teasp. Onion Powder
1/2 Teasp. Garlic Powder
1 Teasp. Kosher Salt
1 Teasp. Pepper
1/2 Cup Italian Seasoning Bread Crumbs or GF Bread Crumbs
4-6 Slices Mozzarella  Cheese (May use any cheese you like)
10 Slices Provolone Cheese
Pre-Cooked Bacon (10-12 slices)

  1. In large bowl add:
    Hamburg, Eggs, Parsley, Onion Powder, Garlic Powder, Salt, Pepper, Bread Crumbs, Salt, Pepper and Bread Crumbs.  Mix well.
  2. On sheet of Parchment Paper, spread Hamburg Mixture into a 10" x 12" rectangle, pressing to approximately 1/2 " thickness.
  3.  Place Mozzarella Cheese over the top, then Provolone Cheese and lastly the strips of pre-cooked bacon leaving at least a 1" boarder around all edges.
  4.  Grab the end of Parchment Paper closest to you and start to roll it like a jellyroll; pressing and folding along the way. Keep pressing and folding until youreach the end. Fold under the seam and press the ends closed. Roll back and forth using the Parchment Paper to help seal the under edges.
  5. Slide onto a Parchment lined baking sheet.
  6. Bake 400 degrees, 45 minutes or until inside temperature is 160 degrees.
  7. Cover with foil to let rest.
  8. Slice into serving size.   Serves 5-6
 

 


"Tex Mex" PJN Style January 10 2018

Ingredients:

For Pasta:

  • 1 Package Papa's Juicy Noodles (Beef Flavoring)
  • 1 Tables. Olive Oil
  • 1 Tables. Butter
  • 1/4 Cup Grated Parmesan Cheese

For Tex Mex Mixture:

  • 1 lb. Hamburger
  • 3 Tbsp. Chili Powder
  • 2 Tbsp. Ground Cumin
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 tsp. Dried Oregano
  • 2 tsp. Paprika
  • 1 tsp.  Salt (Omit salt if diet restricted)
  • 1/4-1/2 tsp. Cayenne Pepper (Optional)
  • 2 Cups strained tomatoes (or chopped, chunky, diced w/green chiles)
  1. Bring a pot of water to a boil to cook pasta.
  2. In large skillet over medium heat, scramble 1 lb. Hamburger until no longer pink.
  3. Add Seasonings: Chili Powder, Cumin, Garlic Powder, Onion Powder, Oregano, Paprika, Salt and Cayenne Pepper. 
  4. Stir together well.
  5. Add Tomatoes, stir, cover and let cook for 5 minutes on low to medium heat.
  6. While Hamburger mixture is simmering, take the seasoning packet from Papa's Juicy Noodles and set aside.
  7. Put pasta from Papa's Juicy Noodles Beef Flavor Package into boiling water to cook.  Stirring occasionally.   Cook 3-4 minutes.
  8. Drain just enough pasta water until there is approximately 1 cup of liquid left in in the pan. (Just barely covering the noodles.)
  9. Add to the noodles: Papa's Juicy Noodles seasoning packet, Butter. Olive Oil and  Parmesan Cheese.  Stir together well.
  10. Add Papa's Juicy Noodles to the Hamburger mixture.  Stir together.  (May add more Parmesan Cheese on top or Monterey or Jack.
  11. Pour into serving bowl or serve from pan.    

      Serves 4
